My story

My name is Alessio Brusadin, Friulano from Pordenone and globetrotting cook like many colleagues. I worked for many years in 5 star establishments such as the Hyde Park Hotel, The Halkin Hotel with Gualtiero Marchesi, The Metropolitan Hotel, until I opened my chain of Italian restaurants one of which (Grano) in 1999 won the award for the best Italian restaurant of the year in London.

After fifteen years abroad, I returned home and after 5 years in South Tyrol I moved to Val di Non, to be precise in Smarano where I started this new adventure. The return to Italy was a rediscovery of wonderful flavors and products. The idea is to capture them all in these jars, in a completely natural way, without adding any preservatives and to spread them for everyone's pleasure.

Since 2017, the Dispensa has a new laboratory in Brugnera (Friuli) from which I can develop everything that I have discovered, tasted and tested over the years.

Extra jams produced with a single fruit and the addition of sugar and lemon juice.

All classic tastes but with scents and textures of the time.

special jams

The specials are a series of jams with unique recipes and with original and delicious combinations.

In this category I go looking for underused ingredients, such as guava, lychees, lemongrass the vintage port. I create these jams as if I were creating a dish.

citrus jams

For citrus jams I use only navel oranges (Sicilia and Calabria), Late Mandarin of Ciaculli (Sicilia), Pompelmi leaf (Calabria or Sicily) and lemon femminello Siracusano (Sicilia).

All untreated fruits. Here I made both classic and more original combinations. One thing they all have in common: perfume!

extra chocolate creams

The extra chocolate creams are fruit jams, some in puree, others in small pieces with dark chocolate or white mashed at the end of cooking.

They are delicious and perfect for afternoon snacks for children and not. They are, like all my completely natural products without the addition of preservatives or dyes.

chutneys, sweet and sour fruit and vegetables

Chutneys are sweet and sour compounds of fruits and vegetables made from brown sugar and organic apple cider vinegar.

They are perfect for combining them with charcuterie cheeses, boiled meats or grilled meats. Also great for garnishing sandwiches and burgers.


My sauces are made with chosen meats, naturally bred, grazing or wild. They are all 100% mono meat and are completely free of preservatives.

They are produced with traditional recipes and slow and long cooking to enhance scents and flavors. All the flavor of a sauce from a high restaurant in the comfort of a vase.
