Alessio Brusadin's citrus jams

For citrus jams I only use navel oranges (Sicily and Calabria), late mandarin from Ciaculli (Sicily), leafy grapefruits (Calabria or Sicily) and Syracusano lemon (Sicily). All untreated fruit. Here I have made both classic and more original combinations. One thing unites all of them: perfume!
