The salt marshes are clayey-sandy soils that characterize some areas close to the Venice lagoon, brackish areas that are submerged almost entirely during the high tides and which are covered with particular vegetation: sea-bream, Salicornia and Limonium.

Limonium or “Fiorella di Barena”, which blooms between July and September by covering the salt marshes in purple and blue, is the main plant from which bees obtain honey.

Opaque yellowish in color, the flavor is unmistakable: sweet at first, it then reveals the salty and balsamic accents, then ending with a bitter note.

Food matching: crustaceans and unseasoned cheeses.
